You guys, I am still swooning over our recent trip in Colorado! If you’ve been following along, you know I love a good celebration, but this getaway was extra special. Norman and I packed our bags and headed straight into the breathtaking mountains of central Colorado for a double dose of love, celebrating a dear friend’s milestone birthday and their wedding anniversary! Honestly, I couldn’t have picked a more magical place to toast to life’s best moments. If you’re looking for the ultimate luxury alpine escape that feels like a warm hug and a five-star vacation all at once, you are going to want to bookmark this one!

To make this Colorado trip truly unforgettable, you need a hotel that goes above and beyond. We stayed at the Park Hyatt Resort & Spa Beaver Creek, and wow it completely stole our hearts! Our room is super spacious, we also have a small balcony to see the amazing view of the mountain outside, love it!

It’s nestled right at the base of the mountain of Colorado, blending Colorado beauty with absolute sophistication. Norman and I had so much fun exploring the property, relaxing by the outdoor fire pits, and just soaking in those sweeping mountain views. The hotel even provides a s’mores kit for the kids…… and adults, of course.

Beyond the gorgeous grounds, I really enjoyed checking out their Resort Shopping, the ultra-convenient ski rental setup right on-site, and their incredible Spa & Fitness Center, which made staying active and relaxed totally effortless.

Dining Right at the Resort ~~ One of the absolute best perks of staying at the Park Hyatt was that we didn’t even need to leave the property to experience incredible food and drinks.

We personally visited three of their signature spots, starting with 8100 Mountainside, which was a fantastic resort-side dining experience with an open kitchen serving up farm-to-table deliciousness alongside stunning slopeside views. If you love Shishito peppers, then try theirs. Soooo Good. Serving sizes are large enough to share.

We also spent time unwinding at the Brass Bear Bar, where we sat back with lovely cocktails, cozy atmosphere, and floor-to-ceiling windows overlooking the mountain peak of Colorado.

On the mornings when we wanted to move a bit slower, we treated ourselves to In-Room Dining, and oh my goodness, we enjoyed the food so much that we felt like royalty, truly living like a king and queen right in the comfort of our room while taking in the fresh mountain breeze of Colorado!

For guests who want to visit Colorado or the Park Hyatt, looking for a quick bite or casual relaxation, the resort also features the Fall Line Epicurean Market for grab-and-go artisan coffees, sandwiches, and snacks, as well as Poolside Dining & Drinks for enjoying refreshing bites and cocktails right by the outdoor pool.

The Exhale Spa ~~ Oh my goodness, talk about bliss! This on-site spa is a total sanctuary. It was the perfect place to unwind and indulge in a little pampering. Norman and I each had an 80-minute deep-tissue massage. GLORIOUS!

The Slopeside Vibes ~~ The mountain views are literally right at your doorstep, and the colorful mountain flowers were everywhere.

Our Colorado Foodie Adventures and Dining Highlights

You know me, I never went to sleep without a good glass of wine on this Colorado trip! Beyond our resort dining, the culinary scene across the valley was exceptional, starting with our night out in Vail Village. We took a recommended private car service over to walk around and treat ourselves to dinner at Matsuhisa, the famous luxury Japanese restaurant in Vail. It was definitely a $$$$’s, highly-rated splurge, but the sushi paired with exquisite wine made it worth every single penny.

During our time in Beaver Creek, Colorado and the surrounding valley, we discovered so many incredible dining spots worth noting for your itinerary. Before taking a gondola ride up for scenic summer mountain views, we had lunch at Citrea, which came highly recommended for its Mediterranean-inspired dishes right by the village ice rink. We also had the pleasure of dining at Mirabelle, a historic farmhouse restaurant known for its romantic European charm and top-tier French-inspired fine dining.

A dear friend in Colorado sent over even more amazing restaurant suggestions to add to our valley wish list for next time! In or near Beaver Creek, there is Splendido at Chateau for contemporary American fine dining, Fattoria in nearby Avon (which serves fantastic Italian, though it is a notoriously hard reservation to get!), Grouse Mountain Grill inside Pines Lodge, and WYLD at the Ritz-Carlton Bachelor Gulch, which is just an easy shuttle ride away. Over in Vail, Lancelot came highly recommended for classic steaks and prime rib, as well as Up The Creek, a lovely spot sitting right by the river.

Let’s Talk Geography | Navigating Central Colorado Rockies

If you are planning a trip to Colorado, it helps to understand the layout of this gorgeous part of Central Colorado. We are talking about the famous Vail Valley, where this massive, stunning mountain range features three incredible ski peaks, each with its own signature town built right at the base:

Vail Mountain: The biggest and most famous of the three, home to the bustling Vail Village.

Bachelor Gulch Mountain: A gorgeous peak where the famous Ritz-Carlton Hotel is tucked away.

Beaver Creek Mountain: Our absolute favorite! We love Beaver Creek because it isn’t quite as massive as Vail. It is so much quieter, more peaceful, and has a private, exclusive feel that we just adore.

Don’t worry about getting bored, though both Beaver Creek and Vail Village are packed with high-end luxury shopping and incredible world-class restaurants central Colorado can offer you!

How To Get There?

When flying in for a Colorado adventure, you have a couple of great options!

Eagle County Regional Airport (EGE): This is the closest airport; you fly right into the valley, and you’re just a short drive from the resorts.
Denver International Airport (DEN): If you prefer a bigger city airport, fly into Denver and enjoy the drive over. It’s a gorgeous, scenic road trip through the mountains that takes a couple of hours.

Once you’re in the valley, getting around is a breeze. Some of the luxury hotels offer complimentary shuttles to take you between the different mountains, and Uber and Lyft are readily available throughout the valley whenever you need a ride. Free Village Connect Shuttle service is great. It connects Beaver Creek Village, Bachelor Gulch, and Arrowhead. It runs daily from 7 am until midnight. Simply request a ride through the Village Connect app.

If you are driving

Park at the Elk Lot or Bear Lot
Complimentary shuttles run continuously between these lots and Beaver Creek Village from early morning until about 1:00 a.m.

Public Transit

Core Transit connects Beaver Creek with Avon, Vail, Edwards, Eagle, Gypsum, and other Eagle County destinations.
Avon Transit offers free service throughout Avon and stops at the Elk Lot. A great option if you want to spend an afternoon shopping or dining in Vail or Avon. Late at night or during major events, wait times can increase.

One tip: if you’re planning a summer trip, there are generally fewer nonstop flights than during ski season, so many travelers connect through Denver or Dallas/Fort Worth. If you’re booking around holidays or fall foliage, it’s worth reserving early because flights into EGE can fill quickly.

Knowing how much you enjoy strolling through beautiful villages, discovering boutiques, enjoying cocktails with mountain views, and photographing charming settings, I think you’d love stepping right outside into Beaver Creek Village without ever needing your car. It strikes a wonderful balance of luxury, convenience, and that cozy Colorado atmosphere.

Getting to toast to our friends’ big milestones while surrounded by the stunning peaks of Beaver Creek and having Norman by my side through it all made for a weekend I’ll be smiling about for a very long time.
